Ingredients
- 1 tablespoon olive oil
- 1 pound fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 celery stalks, diced
- 3/4 cup pearl barley
- 8 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
Sauté Mushrooms: Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes. Transfer to the crockpot.
Add Aromatics: In the same skillet, add chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes. Add to the crockpot with the mushrooms.
Combine Ingredients: Add carrots, celery, pearl barley, vegetable broth, dried thyme, bay leaf, salt, and pepper to the crockpot. Stir to combine all ingredients.
Cook: Cover and cook on low for 6-8 hours, or until the barley is tender and the flavors are well combined.
Finish: Remove the bay leaf. Stir in fresh parsley and adjust seasoning with additional salt and pepper if needed.
Tips
- Sauté First: Sautéing the mushrooms and aromatics before adding them to the crockpot enhances the soup’s depth of flavor.
- Barley Choice: Use pearl barley for a quicker cooking time and a softer texture. Hulled barley is more nutritious but takes longer to cook.
- Broth Quality: Use a high-quality vegetable broth for the best flavor, as it forms the base of the soup.
- Herb Freshness: Adding fresh herbs at the end of cooking brightens the flavors and adds a fresh aroma.
