Crockpot Lentil and Mushroom Stew

Ingredients
- 1 cup dried green lentils, rinsed
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 3 carrots, diced

- 4 cups vegetable broth
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- Prepare Ingredients: Chop the onion, carrots, and slice the mushrooms.
