Crockpot Mexican Chicken Soup

Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh cilantro, chopped
Instructions
- Prepare Ingredients: Place chicken breasts in the bottom of the slow cooker.
- Add Vegetables and Beans: Add black beans, corn, diced tomatoes, onion, and garlic on top of the chicken.
- Season and Add Broth: Sprinkle cumin, chili powder, salt, and pepper over the mixture, then pour in the chicken broth.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked.
- Shred Chicken: Remove chicken breasts, shred them with two forks, and return to the slow cooker.
- Stir and Serve: Stir in fresh cilantro and adjust seasoning if needed before serving.
