Crockpot Moroccan Spiced Lamb Shanks

Ingredients
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 can (14 oz) diced tomatoes
- 1/2 cup dried apricots, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- Sear the lamb: Heat olive oil in a skillet over medium-high heat and brown the lamb shanks on all sides.
- Prepare the aromatics: In the same skillet, cook onions until soft, then add garlic, cumin, coriander, cinnamon, ginger, paprika, salt, and pepper, stirring for 2 minutes.
- Combine ingredients: Transfer lamb shanks to the slow cooker, then pour in the beef broth, diced tomatoes, apricots, and cooked onions and spices.
- Cook: Set the slow cooker to low and cook for 8 hours, or until the lamb is tender and falls off the bone.
- Finish: Stir in fresh cilantro before serving for added flavor.
- Serve: Serve lamb shanks with the sauce over couscous or rice.

- For a thicker sauce, remove the lid in the last hour to allow excess liquid to evaporate.
- Searing the lamb shanks enhances the flavor by caramelizing the surface.
