Crockpot Ratatouille

Ingredients
- 1 large eggplant, diced
- 2 zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped

- 1 can (14 oz) diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Prepare Vegetables: Dice the eggplant and slice the zucchinis. Chop the bell peppers and onion.
- Combine Ingredients: Place all vegetables, garlic, and canned tomatoes in the slow cooker.
- Season: Drizzle olive oil over the vegetables, then add thyme, basil, salt, and pepper. Stir to coat evenly.
