Crockpot Beef Bourguignon

Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 cups red wine
- 2 cups beef broth
- 3 tbsp tomato paste
- 4 cloves garlic, minced
- 1 lb baby potatoes, halved
- 4 carrots, sliced
- 1 onion, chopped
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prepare Beef: Season the beef cubes with salt and pepper.
- Sauté Vegetables: In a skillet, sauté onion and garlic until fragrant.
- Combine Ingredients: Place beef, sautéed vegetables, potatoes, carrots, thyme, and bay leaves in the crockpot.
- Add Liquids: Pour wine, beef broth, and tomato paste over the ingredients.
- Cook: Set the crockpot on low and cook for 8 hours, or until beef is tender.
- Thicken Sauce: If desired, remove lid for the last 30 minutes to thicken the sauce.
