Crockpot Beef Bourguignon

Ingredients
- 2 lbs beef chuck, cut into 2-inch cubes
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 3 carrots, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/2 pound mushrooms, sliced
- 2 tablespoons olive oil
- 2 tablespoons flour
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Sear the Beef: In a skillet, heat olive oil over medium-high heat and sear the beef cubes until browned on all sides.
- Prepare Vegetables: Add carrots, onion, garlic, and mushrooms to the skillet; sauté for 5 minutes.
- Combine Ingredients: Transfer beef and vegetables to the slow cooker. Stir in flour, tomato paste, thyme, salt, and pepper.
- Add Liquids: Pour wine and beef broth over the ingredients in the slow cooker and mix well.
- Cook: Cover and cook on low for 8 hours or until beef is tender.
- Finish: Before serving, adjust seasoning if necessary and garnish with fresh herbs if desired.
