Crockpot Beef and Broccoli Stew

Ingredients
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 2 cups beef broth
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- 4 cups broccoli florets
- 2 tablespoons cornstarch
- 2 tablespoons water
- Salt and pepper to taste
Instructions
- Prepare the beef: Season the beef cubes with salt and pepper.
- Mix the sauce: In a bowl, combine beef broth, soy sauce, brown sugar, garlic, sesame oil, and ground ginger.
- Slow cook: Place the beef in the crockpot and pour the sauce over it. Cook on low for 6 hours or until the beef is tender.
- Add broccoli: In the last 30 minutes of cooking, add the broccoli florets to the crockpot.
- Thicken the stew: Mix cornstarch and water in a small bowl. Stir into the crockpot and cook for an additional 10 minutes.
