Crockpot Chickpea and Spinach Stew

Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 4 cups fresh spinach
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- Prepare Ingredients: Chop the onion and mince the garlic.
- Combine Ingredients: In the crockpot, add chickpeas, diced tomatoes, onion, garlic, cumin, coriander, smoked paprika, and vegetable broth.
- Cook: Cover and cook on low for 4 hours or until the onion is tender.
- Add Spinach: Stir in fresh spinach and cook for an additional 15 minutes until wilted.
