Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 1 cup diced tomatoes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper (optional)
- Salt to taste
- 2 tablespoons olive oil
Instructions
- Prepare the Base: Heat olive oil in a skillet over medium heat and sauté onions and garlic until soft.
- Combine Ingredients: Add chickpeas, coconut milk, tomatoes, and sautéed onions and garlic to the slow cooker.

- Cook: Set the slow cooker to low and cook for 4 hours.
