Crockpot Taco Casserole
A delicious and hearty casserole combining classic taco flavors with the ease of slow cooking.

Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 4 cups tortilla chips, crushed
- 1/4 cup chopped cilantro
- 1/2 cup sliced black olives
Instructions
- Brown the Beef: Cook the ground beef in a skillet over medium heat until browned, then drain excess fat.
- Mix Ingredients: In a large bowl, combine the cooked beef, taco seasoning, black beans, corn, diced tomatoes, and salsa.
- Layer in Crockpot: Spread half of the crushed tortilla chips at the bottom of the crockpot, then layer half of the beef mixture and half of the cheese. Repeat the layers.
- Cook: Cover and cook on low for 4 hours or until heated through and cheese is melted.
- Add Toppings: In the last 10 minutes, sprinkle the top with black olives and cilantro.
- Serve: Serve hot, optionally garnished with additional cilantro or sour cream.
Tips
- Use lean ground beef to reduce excess grease.
- For extra spice, add chopped jalapeƱos to the beef mixture.
- Keep tortilla chips crunchy by adding them just before serving.
