Crockpot Guinness Braised Short Ribs

Ingredients
- 3 lbs beef short ribs
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup Guinness stout
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions
- Sear the Ribs: Heat olive oil in a skillet over medium-high heat and sear short ribs on all sides until browned.
- Prepare the Base: In the same skillet, add onion and garlic, sauté until softened.
- Combine Ingredients: Transfer ribs, onion, and garlic to the slow cooker. Add beef broth, Guinness, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Cook: Set slow cooker to low and cook for 8 hours until ribs are tender.
- Thicken Sauce (Optional): Remove ribs, skim fat from the sauce, and reduce sauce on the stovetop if desired.
- Serve: Return ribs to the sauce, serve warm, and enjoy.
