Crockpot Guinness Braised Brisket

Ingredients
- 3 pounds beef brisket
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3 cloves garlic, minced
- 2 onions, sliced
- 2 cups beef broth
- 1 bottle (12 oz) Guinness beer
- 2 tablespoons Worcestershire sauce
- 3 carrots, cut into chunks
- 3 sprigs fresh thyme
Instructions
- Sear Brisket: Heat olive oil in a pan over medium-high heat. Season brisket with salt and pepper, then sear on all sides until browned.
- Prepare Crockpot: Place minced garlic, sliced onions, and carrots at the bottom of the slow cooker.
- Add Liquids: Pour beef broth, Guinness beer, and Worcestershire sauce over the vegetables.
- Add Brisket: Place the seared brisket on top of the vegetables and liquid. Add thyme sprigs.
- Cook: Cover and cook on low for 8 hours, or until the brisket is tender and easily shredded.
- Rest and Serve: Let the brisket rest for 10 minutes before slicing. Serve with the cooked vegetables and sauce.
