Crockpot Ham and Bean Soup

Ingredients
- 1 pound dried navy beans, rinsed and sorted
- 8 cups water
- 1 meaty ham bone or 2 cups diced ham
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Prepare Beans: Place the dried navy beans in a large bowl and cover with water. Soak overnight or use the quick soak method.
- Combine Ingredients: Drain and rinse beans, then add them to the crockpot along with water, ham, carrots, celery, onion, garlic, thyme, bay leaf, and pepper.
- Cook: Cover and cook on low for 8 hours or until beans are tender.
- Check Seasoning: Taste and adjust seasoning with salt and more pepper if needed.
- Remove Ham Bone: If using a ham bone, remove it, shred any remaining meat, and return it to the crockpot.
- Serve: Stir well and serve hot.

- For a creamier texture, mash some of the beans with a potato masher before serving.
- Add a splash of vinegar or lemon juice before serving for a hint of brightness.
