Crockpot Mushroom Lentil Curry

Ingredients
- 1 cup dried green or brown lentils
- 8 oz button mushrooms, sliced
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 3 cups vegetable broth
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Rinse the lentils under cold water and set aside.
- Combine Ingredients: Add lentils, mushrooms, onion, garlic, coconut milk, diced tomatoes, curry powder, cumin, and turmeric to the crockpot.
