Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced

- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 (28-ounce) can diced tomatoes
- 3 cups vegetable broth
- 2 large carrots, sliced
- 1 zucchini, diced
Instructions
- Prepare Ingredients: Heat olive oil in a skillet over medium heat, add onion and garlic, and sauté until soft.
