Crockpot BBQ Pulled Jackfruit

Ingredients
- 2 cans (20 oz each) young green jackfruit, drained and rinsed
- 1 cup BBQ sauce
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup vegetable broth
Instructions
- Prepare Jackfruit: Cut the jackfruit into smaller pieces, removing any seeds and tough core parts.
- Sauté Vegetables: In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
- Combine Ingredients: Add jackfruit, sautéed onion and garlic, BBQ sauce, smoked paprika, salt, and pepper to the slow cooker.
- Add Liquid: Pour vegetable broth over the mixture and stir to combine.
- Cook: Cover and cook on low for 4 hours or until jackfruit is tender.
- Shred Jackfruit: Use two forks to shred the jackfruit directly in the slow cooker.
Tips
- Ensure jackfruit is young and green; ripe jackfruit is too sweet for this dish.
- Adjust BBQ sauce quantity to taste for more or less sweetness.
- Add extra spices like cayenne for a spicier kick.
