Crockpot Berry Cobbler

Ingredients
- 4 cups mixed berries (such as blueberries, raspberries, strawberries)
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 1/4 cup brown sugar
Instructions
- Prepare Berries: In a large bowl, mix the berries, lemon juice, and 1/2 cup of granulated sugar.
- Make Cobbler Topping: In a separate bowl, combine flour, baking powder, salt, and remaining granulated sugar.
- Add Wet Ingredients: Stir in melted butter and vanilla extract to the flour mixture until just combined.
- Assemble in Crockpot: Spread the berry mixture evenly in the bottom of a greased crockpot, then drop spoonfuls of the cobbler topping over the berries.
- Add Brown Sugar: Sprinkle brown sugar and cinnamon evenly over the top.
- Cook: Set the crockpot to low and cook for 4 hours, or until the topping is golden brown and the berries are bubbly.
