Crockpot Irish Barmbrack

Ingredients
- 1 cup mixed dried fruit
- 1 cup hot brewed black tea
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1 tablespoon honey
Instructions
- Soak Fruit: Combine the mixed dried fruit and hot tea in a bowl, allowing it to soak for at least 1 hour.
- Prepare Batter: In another bowl, mix flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- Combine Ingredients: Add the soaked fruit (including any remaining tea) and beaten egg to the dry ingredients, stirring until just combined.
- Prepare Crockpot: Line the crockpot with parchment paper or lightly grease it.
- Cook: Pour the batter into the prepared crockpot, cover, and cook on high for 3 hours or until a toothpick inserted into the center comes out clean.
- Finish: Brush the top with honey while still warm, then let it cool before serving.
