Crockpot Cajun Red Beans and Cauliflower Rice
This hearty and flavorful dish combines the spicy kick of Cajun seasoning with the wholesome goodness of red beans and cauliflower rice.

Ingredients
- 1 pound dried red beans, rinsed and soaked overnight
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- 6 cups vegetable broth
- 1 bay leaf
- 4 cups cauliflower rice
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Drain and rinse the soaked red beans.
- Combine Ingredients: In a crockpot, add red beans, onion, bell pepper, celery, garlic, Cajun seasoning, smoked paprika, thyme, vegetable broth, and bay leaf.
- Cook: Cover and cook on high for 4 hours or until the beans are tender.
- Add Cauliflower Rice: Stir in cauliflower rice and cook for an additional 15 minutes.
- Season: Season with salt and pepper to taste.
- Serve: Remove bay leaf before serving and enjoy hot.
