Crockpot Ham and Bean Soup

Ingredients
- 1 pound dried navy beans, rinsed
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cups diced cooked ham
- 1 ham bone or hock
- 4 cups chicken broth
- 2 cups water
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Prepare Ingredients: Rinse the beans and chop all vegetables.
- Combine Ingredients: Place beans, onion, carrots, celery, ham, ham bone, chicken broth, water, garlic, thyme, and pepper into the crockpot.
- Set Cooking Time: Cover and cook on low for 8 hours or until beans are tender.
- Remove Bone: Once cooked, remove the ham bone, and chop any remaining meat to return to the soup.
