Crockpot Herbed White Bean Dip

Ingredients
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable broth
- 1 tablespoon lemon juice
Instructions
- Prepare Beans: Place the drained and rinsed cannellini beans in the slow cooker.
- Add Ingredients: Add olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper to the slow cooker.
- Stir Mixture: Pour vegetable broth over the mixture and stir until well combined.
- Cook: Cover and cook on low for 2 hours until the beans are tender and flavors meld.
- Blend: Use an immersion blender to puree the mixture until smooth, or transfer to a blender and blend in batches.
- Finish: Stir in lemon juice and adjust seasoning to taste before serving.
