Crockpot Lentil Curry Soup

Ingredients
- 1 cup dried lentils
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1 (14-ounce) can coconut milk
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 2 cups chopped spinach
- 1 tablespoon olive oil
Instructions
- Prepare Ingredients: Rinse the lentils under cold water and set aside.
- Sauté Aromatics: In a pan, heat olive oil over medium heat, add onion and garlic, and sauté until soft.
- Combine Ingredients: Transfer onion and garlic to the slow cooker, add lentils, curry powder, cumin, turmeric, salt, coconut milk, vegetable broth, and tomatoes.
- Cook: Set the slow cooker to low and cook for 4 hours, stirring occasionally.
- Add Spinach: In the last 30 minutes of cooking, add chopped spinach and stir well.
