Crockpot Ropa Vieja
Ropa Vieja is a classic Cuban dish featuring shredded beef in a savory tomato-based sauce with peppers and spices. This slow-cooked version brings out deep, rich flavors with minimal effort.

Ingredients
- 2 pounds flank steak
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 cup beef broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Prepare the beef: Season the flank steak with salt and pepper and sear in olive oil over medium-high heat until browned on both sides.
- Layer the vegetables: Place the sliced onions, red and green bell peppers, and minced garlic in the bottom of the crockpot.
- Add the beef: Place the seared flank steak on top of the vegetables in the crockpot.
- Mix the sauce: Combine crushed tomatoes, beef broth, cumin, paprika, and oregano; pour over the beef.
- Cook: Cover and cook on low for 8 hours, or until the beef is tender and can be easily shredded.
- Shred and serve: Remove the beef, shred with two forks, and return to the crockpot to mix with the sauce before serving.
Tips
- Use a fork to test if the beef is tender enough to shred.
- For added flavor, include a bay leaf during cooking and remove before serving.
- Serve with rice or warm tortillas for a complete meal.
