Ingredients
- 1 cup dried green lentils, rinsed

- 4 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups fresh spinach leaves
Instructions
- Prepare Ingredients: Place the lentils, onion, carrots, garlic, and diced tomatoes in the slow cooker.
- Add Liquids and Spices: Pour in the vegetable broth and stir in the curry powder, cumin, coriander, smoked paprika, salt, and pepper.
- Cook: Cover and cook on low for 8 hours or until the lentils are tender.
- Add Spinach: Stir in the spinach leaves during the last 15 minutes of cooking.
