Ingredients
- 3 pounds beef chuck roast

- 1/2 teaspoon black pepper
- 1 large onion, sliced
- 4 carrots, cut into chunks
- 3 potatoes, cut into chunks
Instructions
- Prepare the Beef: Season the beef roast with black pepper, rosemary, and thyme.
- Sear the Roast: Heat a skillet over medium-high heat and sear the roast on all sides until browned.
- Mix the Sauce: In a bowl, combine beef broth, balsamic vinegar, soy sauce, honey, and garlic.
- Assemble in Crockpot: Place the sliced onion, carrots, and potatoes at the bottom of the crockpot. Put the seared beef on top.
- Add the Sauce: Pour the balsamic mixture over the beef and vegetables.
- Cook: Cover and cook on low for 8 hours or until the beef is tender.
