Crockpot Barbacoa
Barbacoa is a flavorful, slow-cooked beef dish that is tender and perfect for tacos or burrito bowls.

Ingredients
- 3 lbs beef chuck roast
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1/2 tsp ground cloves
- 1/4 cup fresh lime juice
- 1/4 cup apple cider vinegar
- 1/2 cup beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prepare the Beef: Cut the beef chuck roast into large chunks and season with salt and pepper.
- Blend the Marinade: In a blender, combine garlic, chipotle peppers, cumin, oregano, cloves, lime juice, and apple cider vinegar until smooth.
- Assemble the Crockpot: Place beef in the crockpot and pour the blended marinade over it, then add beef broth and bay leaves.
- Cook: Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
- Shred the Beef: Remove the beef from the crockpot, discard the bay leaves, and shred the meat using two forks.
- Serve: Return the shredded beef to the crockpot, mix well with the juices, and serve warm.
Tips
- Use fresh lime juice for the best flavor.
- Adjust the number of chipotle peppers for desired spice level.
- Leftover barbacoa can be frozen for future meals.
