Crockpot Irish Colcannon
Colcannon is a traditional Irish dish made with creamy mashed potatoes and cabbage, perfect for a comforting meal.

Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 1 small head of cabbage, chopped
- 1 cup green onions, chopped

- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Prepare Potatoes: Place the cubed potatoes in the crockpot.
- Add Cabbage and Onions: Layer the chopped cabbage and green onions over the potatoes.
- Add Butter and Seasonings: Add cubed butter, salt, pepper, and nutmeg on top.
- Cook: Cover and cook on high for 3-4 hours until the potatoes are tender.
- Mash and Mix: Once cooked, add milk and mash the mixture until smooth and well combined.
- Serve: Adjust seasoning to taste and serve warm.
