Crockpot White Chicken Chili

Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen corn
- 1/2 cup sour cream
Instructions
- Prepare Ingredients: Place chicken breasts at the bottom of the crockpot.
- Add Beans and Chilies: Pour the white beans and green chilies over the chicken.
- Season: Sprinkle cumin, chili powder, garlic powder, onion powder, salt, and pepper evenly.
- Add Liquids: Pour chicken broth over the ingredients.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked.
- Shred Chicken: Remove the chicken, shred it, and return it to the crockpot along with the corn and sour cream. Stir and cook for an additional 15 minutes.
Tips
- Use a fork to easily shred the chicken directly in the crockpot.
- For extra creaminess, add a block of cream cheese before the final 15 minutes.
- Adjust the level of spiciness by adding more or less chili powder.
